Ingredients:

  • 1 pound pork tenderloin, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • Vegetable oil, for frying
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped pineapple
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/2 cup water

Instructions:

  1. In a large bowl, whisk together the cornstarch, flour, salt, and black pepper.
  2. Add the beaten egg to the bowl and mix well.
  3. Add the pork to the bowl and toss to coat well with the batter.
  4. Heat the vegetable oil in a large pot or wok over medium-high heat.
  5. Add the pork to the pot in batches and fry until golden brown and crispy, about 3-4 minutes per batch.
  6. Remove the pork from the pot and drain on paper towels.
  7. In a separate pot or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  8. Add the chopped onion, green bell pepper, and pineapple to the pot and stir-fry for 2-3 minutes or until softened.
  9. In a small bowl, whisk together the ketchup, rice vinegar, brown sugar, soy sauce, cornstarch, and water.
  10. Add the sauce to the pot with the vegetables and stir well.
  11. Add the fried pork to the pot and toss to coat with the sauce.
  12. Cook for an additional 2-3 minutes or until the sauce has thickened and the pork is heated through.
  13. Serve the sweet and sour pork hot, garnished with chopped green onions, if desired.
